Wholemeal sardine coca base

INGREDIENTS
For the base:
250g of whole wheat flour
100ml of extra virgin olive oil
100ml of water
1 egg yolk
1/2 teaspoon of salt
For the filling:
400g of sardines
1 onion
2 large tomatoes
Extra virgin olive oil
Thyme
Parsley
Pepper
Salt
Note : We can change the main ingredient or the vegetables according to our taste.
ELABORATION
Cut the onion and the two tomatoes into julienne strips.
Add a drizzle of oil, salt and pepper.
Roast in the oven at 160-180ºC until very tender.
While preparing the dough:
Mix the ingredients until a ball forms.
Roll out with a rolling pin until you obtain a base 1 cm thick.
Bake at 200ºC for 15-20 min.
Fill the base with the roasted vegetables and place the sardines on top with a few drops of oil, salt and thyme.
Return to the oven for 5 minutes (or 10 minutes if the sardines are thick).
Sprinkle with parsley and serve immediately.
