Wholemeal sardine coca base


INGREDIENTS


For the base:

 


  • 250g of whole wheat flour

  • 100ml of extra virgin olive oil

  • 100ml of water

  • 1 egg yolk

  • 1/2 teaspoon of salt



For the filling:


  • 400g of sardines

  • 1 onion

  • 2 large tomatoes

  • Extra virgin olive oil

  • Thyme

  • Parsley

  • Pepper

  • Salt


Note : We can change the main ingredient or the vegetables according to our taste.


ELABORATION

 

  • Cut the onion and the two tomatoes into julienne strips.

  • Add a drizzle of oil, salt and pepper.

  • Roast in the oven at 160-180ºC until very tender.

  • While preparing the dough:

  • Mix the ingredients until a ball forms.

  • Roll out with a rolling pin until you obtain a base 1 cm thick.

  • Bake at 200ºC for 15-20 min.

  • Fill the base with the roasted vegetables and place the sardines on top with a few drops of oil, salt and thyme.

  • Return to the oven for 5 minutes (or 10 minutes if the sardines are thick).

  • Sprinkle with parsley and serve immediately.
