Salmon with a pea base


INGREDIENTS


  • Salmon

  • Fine peas

  • Potato

  • Sesame

  • Dehydrated onion

  • Salt

  • Pepper


ELABORATION


  1. Sauté the onion, add the peas and stir-fry everything together.

  2. Cover with chicken or vegetable stock and cook for 15-20 minutes.

  3. Pass through a chinois strainer until you get a smooth cream.

  4. Cut some thin slices of potato and grill them.

  5. Season the salmon with salt and pepper and grill it.

  6. Serve adding the sesame seeds along with the dried onion, as shown in the photograph.
