Rice cake with tahini, blackberry jam and seed mix


INGREDIENTS

  • Brown rice cake

  • Tahini

  • Sugar-free blackberry jam with agave syrup. (Recipe below)

  • Mixture of ground flax and chia seeds.


Energetic but not high in calories.


JAM RECIPE


Ingredients

  • 300 g blackberries (fresh or frozen)

  • 2–3 tablespoons of agave syrup (to taste)

  • Juice of ½ lemon

  • Optional: 1 teaspoon of chia seeds (to thicken)


Step by step

  1. Wash the blackberries and put them in a saucepan.

  2. Add the lemon juice and cook over medium heat for 10–15 minutes, stirring and mashing with a fork.

  3. Sweeten with agave syrup when the fruit is soft.

  4. Optional: add the chia seeds, mix and cook for 2–3 minutes longer.

  5. Blend it if you want it fine, or leave it in chunks if you like it rustic.

  6. Let it cool: it will thicken a little more as it rests.


Quick tip: It keeps for 5–7 days in the fridge in a glass jar.
