Wholemeal toast with roasted vegetables


INGREDIENTS AND PREPARATION


  • Toast the bread.

  • Place the escalivada on top. (Recipe below)

  • Place the sliced goat cheese and heat in the oven preferably, or alternatively in the microwave for 30-60 seconds.














INGREDIENTS


  • Red pepper

  • Eggplant

  • Onion

  • Extra virgin olive oil


ELABORATION


  • Preheat the oven to 180ºC.

  • We wash and dry the peppers, eggplants, and onions.

  • We brush them one by one with olive oil.

  • We cut the onions in half.

  • We placed the silver on the tray and the vegetables on top.

  • When it's hot, we roast them in the oven for about an hour and a half, turning them over occasionally.

  • When they are well roasted, we take them out of the oven and let them cool a little.

  • When they are lukewarm, peel all the vegetables, remove the stems and seeds, and remove the first layer from the onion.

  • Once they are well peeled and cleaned, we cut the eggplants and peppers into strips.
