Banana bread


INGREDIENTS


  • 250g wholemeal spelt flour

  • 2 large ripe bananas

  • 2 eggs

  • 100g of panela or sweetener (optional if you like it sweet)

  • 60 ml olive oil (I used Extra Virgin)

  • 125 ml plant-based drink (I used almonds)

  • 1 sachet of yeast

  • 1 dessert spoon of ground cinnamon

  • 1 dessert spoon of vanilla extract

  • 1 handful of walnuts (optional)

  • Rolled oats for decoration (optional)


ELABORATION

  1. Preheat oven to 190º

  2. Mash the bananas with a fork, do not blend with a mixer, and set aside.

  3. In a large bowl, beat the eggs with the panela until the mixture is frothy (skip this step if you don't want it sweet).

  4. We add the rest of the wet ingredients: vanilla essence, oil, bananas and plant-based milk.

  5. Sift the dry ingredients: flour, cinnamon and yeast over the previous mixture and mix well until it is homogeneous.

  6. We cracked a few walnuts and added them.

  7. We take a rectangular mold and place a sheet of baking paper on top.

  8. Pour in the mixture and bake for 40-50 minutes.

  9. I recommend doing the toothpick test at 40 minutes to see if it's done because the time varies a lot depending on the oven or the material of the container.

  10. Remove from heat, let cool and unmold.
